Royal Wedding Tea Party

Last Saturday we hosted a post-nuptial Royal Wedding Tea & Watch party.  Most of you probably know that I love tea… a lot.  Two Christmases ago Bryan gave me a traditional British tea set, Johnson Brothers Old Britain Castles.  This came in quite handy for the Royal Wedding.  I stayed up until the wee hours of the night baking scones and cookies, and then I woke up early to assemble tea sandwiches.  The hit was the Earl Grey Tea Shortbread Cookies.  There are a number of recipes for this out there (such as Martha Stewart, Food.com, and the one I used was RealSimple) but here are a couple general tips to keep in mind:

  • use quality loose leaf Earl Grey tea (not out of tea bags!)
  • sprinkle fleur de sel on top of the cookies before baking
  • cut baking time a few minutes if you opt to cook on aluminum foil instead of parchment paper.

Sadly, we were so captivated by the moment in history and (lets face it) the unveiling of the dress / poking fun at the royal cousins’ hats, that we forgot to take pictures.  Here’s a little artwork instead.
